The white part is mayonnaise! This is a snack prepared by María José (she’s related to Julie and Marisa’s host family), it’s a gourd-like food she peeled and sliced and is evidently served with mayonnaise. The flavor and texture of the gourd reminded me of butternut squash- it was quite delicious actually! It’s quite a combination, whoever would have thought?
